Bean Salad
Serves 8

Ingredients:

15 ounces of Garbanzo beans cooked-drain

15 ounces of Black beans cooked-drain
-
15 ounce of Kidney beans cooked-drain
-
1/2 cup grated Carrots
-
Optional: 3/4 cup of red onions or green scallions
-
1/2 cup diced tomatoes
-
1 cup of fresh or frozen corn
-
1/2 Lime

Dressing:
-
Approx 10 ounces of Salsa
-
2 Tablespoons of olive oil
-
4 or 5 drops of Lemon Young Living Essential oil
-
4 drops of Black Pepper Essential Oil
-
1/4 Tsp of cumin powder
-
1/4 tsp. chili powder

Directions:

In a bowl combine all salad ingredients.

In a separate smaller bowl, add the dressing ingredients.
-
Stir and allow to sit for a few minutes.
-
Add dressing to salad and fold ingredients until mixed well.
Can be chilled for potlucks/picnics or served at room temperature.
