Bean Salad

Serves 8

​

Ingredients:

  • 15 ounces of Garbanzo beans cooked-drain

  • 15 ounces of Black beans cooked-drain

  • 15 ounce of Kidney beans cooked-drain

  • 1/2 cup grated Carrots

  • Optional:  3/4 cup of red onions or green scallions

  • 1/2 cup diced tomatoes

  • 1 cup of fresh or frozen corn

  • 1/2 Lime

Dressing:

  • Approx 10 ounces of Salsa

  • 2 Tablespoons of olive oil

  • 4 or 5 drops of Lemon Young Living Essential oil

  • 4 drops of Black Pepper Essential Oil

  • 1/4 Tsp of cumin powder

  • 1/4 tsp. chili powder

Directions:

  1. In a bowl combine all salad ingredients.

  2. In a separate smaller bowl, add the dressing ingredients.

  3. Stir and allow to sit for a few minutes.

  4. Add dressing to salad and fold ingredients until mixed well.

 

 

Can be chilled for potlucks/picnics or served at room temperature.
