
Chicken-Pesto Pizza
Serves 4
For Pesto:
4 oz fresh basil
½ cup olive oil
½ cup pine nuts, almonds or other nuts
2 cloves garlic
1 tsp salt

Pizza Toppings:
1 C halved grape tomatoes
2 tbsp olive oil
2 drops Basil Vitality™ Essential Oil
2 drops Oregano Vitality™ Essential Oil
½ tsp salt
¼ tsp pepper
1 chicken breast
1/4 C Parmesan cheese

​Directions
Place a portion of the fresh basil and all of the olive oil, nuts, garlic and salt in a food processor. Puree. Add more fresh basil and blend again until all of the basil has been used.

Halve the grape tomatoes. Mix 2 tbsp olive oil with the essential oils, salt and pepper. Roast the tomatoes at 400F for 20 minutes.
Slice the chicken breast in large pieces. Cover with pesto and grill until fully cooked. Cut the grilled chicken into smaller pieces.
Spread homemade or commercial pizza dough onto an oiled pizza pan. Spread the remaining pesto into a thin layer over the pizza (you may have some extra pesto for other uses!). Add the roasted tomatoes. Sprinkle ¼ C Parmesan cheese over the pizza.
Bake at 450F 10-15 mins or until crust is golden brown.
